Rigorous livestock benchmarks from the finest cattle producers in Canada and processing criteria from renowned European plants are just the beginning of our rigorous pursuit of industry leadership and new standards.
After Japan declared Wagyu a national treasure and ceased live exports in 1997, Fullblood genetics became extremely rare outside the country. Unlike most American Wagyu producers who primarily focus on F1 cattle (50% Wagyu, 50% Angus), Sakura Wagyu Farms sets itself apart by operating both an F1 program and a dedicated American Tajima Fullblood program built exclusively on verified 100% Japanese genetics. This commitment to genetic purity allows us to preserve the original traits that make Wagyu truly exceptional, from consistent marbling to refined texture and flavor.

Over the last 40 years I have had the opportunity to be engaged in many aspects of the beef supply chain, from an early career in retail meat departments to managing some of North America’s largest meat processors. Each of these roles has provided me with a perspective on product quality, management and the importance of partnerships between customers and suppliers. The intent with the creation of Harmony Beef was to build on these key learnings and combine them with a focus to establish an organization truly dedicated to producing exceptional beef products.
Our organization’s goals are ambitious and one of the first steps in the journey was the development of the Harmony Beef processing facility. We have taken the time and made the investment to ensure that the plant is engineered to the same high standards as the beef products it will produce. This includes unique and innovative approaches to harvest and fabrication, food safety, animal welfare and sustainability.
In parallel with the development of the plant, I have also had the opportunity to assemble the management team. These are individuals who I have selected for their experience and also their shared commitment to the standards and values that Harmony Beef represents. There are more than one hundred different Kobe Beef farms. Rooted in a rich heritage that spans over half a century, Usunaga Farm embodies the enduring legacy of a third-generation family devoted to the refined art of Wagyu farming. Under the diligent stewardship of its dynamic young farmers, the farm maintains its commitment to unparalleled quality and embraces modernity by actively engaging with a global audience through social media.
Within the rarified domain of luxury Kobe Beef, Usunaga Farm distinguishes itself through a pioneering feeding strategy, integrating whisky mash from the renowned Suntory Yamazaki distillery. This refined diet combines 50% fermented feed with 30% rice-based and 20% grain feed, enriching the beef's flavor complexity via fermentation—a departure from conventional grain-heavy diets that typically fall short on flavor. By carefully producing most of their feed internally, Usunaga achieves a profound flavor profile and a perfectly balanced texture that is sophisticated yet not excessively rich, setting their beef apart from other brands.

The Kobe beef supply is carefully curated from just 12 Tajima Fullblood bulls each year, selected by the government for their superior traits. Only about 10% of the 5,500 eligible cattle are exported annually from a select group of certified farmers, ensuring that only the finest beef bears the prestigious Kobe label.
The esteemed reputation of Kobe beef is maintained through rigorous production standards set by the Kobe Beef Association. To bear the iconic Japanese chrysanthemum mark, certified Kobe beef must meet stringent criteria:
Derived from the Tajima bloodline, raised and processed exclusively in Japan's Hyogo Prefecture, mirroring the exclusivity of true Champagne from France's Champagne region.
Graded A5 or A4, with a Beef Marbling Score (BMS) of 6 or above.

Any Wagyu labeled as "Kobe" outside these standards is not genuine Kobe Beef.

Only beef that meets the strict standards for both marbling and oleic acid content can carry the name Shinshu Premium Beef. To qualify, the wagyu must contain a minimum of 52% oleic acid, with thresholds adjusted by marbling grade. Cattle that fall just
